Week 2 meal plan
My current stocks of sanity food & staples:
- 5 single serving pot pies
- 4 meals of chicken nuggets
- 1.5 meals of chimichangas
- 2 cans of non-condensed soup
- 9 portions of beef chili (homemade)
- 7 portions of beef stew (homemade)
Easy-prep I have on hand:
- Fixings for ham sandwiches, PB&J sandwiches, chips&beans, eggs on toast
- 2.5 meals of uncooked chicken tenders
- 2 3-meal trays of lasagna (homemade)
- 1 3-meal tray of cheese enchiladas (homemade)
- 1 box of macaroni and cheese
- 11 hamburger patties
- Gyro meat (homemade)
Overnight thawing/more prep needed:
- 1 2-meal bag of pork chops+veg (homemade)
Misc:
- 1 2-serving bag of air fryer carrots (homemade)
- 1 2-serving bag of "roaster" veggies
- 1 9-roll tray of dinner rolls (homemade)
- 2 hamburger buns (homemade)
- 5 single serving bowls of microwaveable sticky rice
- 5 cups of shredded beef (homemade)
- 11 sandwich hoagie rolls (homemade)
- 7(?) hoagie rolls to eat with soups (homemade)
- Half a bag of oven fries
How I ate last week (out of order, but you get the idea):

- Some spoons: Sanity food/staples x2, burgers & oven fries
- Day 3
- Low spoons: Sanity food/staples x2, oven chicken tenders
- Day 4
- Low spoons: Sanity food/staples x2, tikka masala + microwave rice

- Many spoons: Sanity food/staple x2, prepping a staple (chili) and having the first as lunch/dinner

- Some spoons: Sanity food/staple x3, (made a bunch of hoagies)

- Many spoons: Sanity food/staples x2, prepping a staple (beef stew, shredded beef) and having the first as lunch/dinner
What we're doing this week:
So last week, I successfully went nuts on the food prep and got almost everything I wanted done (though I made hoagies instead of hamburger buns/pizza bases and used half the beef to make shredded beef instead). Turns out I'll have some big expenses coming up so I was trying to make meals for under $5/day. I somewhat failed at that, but I got closer than I was previously, so that's nice.
Bread flour is amazing, btw. I'm a convert. It may or may not be worth the extra $$$ in my situation, but it sure is nice.
I don't think I'll be adding beef stew to my staples unless I can adapt it to be less intensive. The only reason I made it through this time was because my partner showed up and insisted on being helpful. (<3)
My plans this week are to make some combination of: a few trays of beef enchiladas with the shredded beef, falafel, hamburger buns, pizza crusts, and/or pineapple chicken. I've had most of the supplies for the latter for a while, so maybe this is the week I'll finally do it, lol. It's also much lower impact than the other non-bread-product items there.
For my twice-weekly Social Events, I shall make: the tray of enchiladas (pre-prepped) + mexican rice + canned beans (bought) (last week got canceled due to life events), and lasagna (pre-prepped) + ceasar salad + rolls (pre-prepped).
I'm also clean out of EBT, so I'll be working with what I have this week.
