Week 2 meal plan

So last week, I successfully went nuts on the food prep and got almost everything I wanted done (though I made hoagies instead of hamburger buns/pizza bases and used half the beef to make shredded beef instead). Turns out I'll have some big expenses coming up so I was trying to make meals for under $5/day. I somewhat failed at that, but I got closer than I was previously, so that's nice.

Bread flour is amazing, btw. I'm a convert. It may or may not be worth the extra $$$ in my situation, but it sure is nice.

I don't think I'll be adding beef stew to my staples unless I can adapt it to be less intensive. The only reason I made it through this time was because my partner showed up and insisted on being helpful. (<3)

My plans this week are to make some combination of: a few trays of beef enchiladas with the shredded beef, falafel, hamburger buns, pizza crusts, and/or pineapple chicken. I've had most of the supplies for the latter for a while, so maybe this is the week I'll finally do it, lol. It's also much lower impact than the other non-bread-product items there.

For my twice-weekly Social Events, I shall make: the tray of enchiladas (pre-prepped) + mexican rice + canned beans (bought) (last week got canceled due to life events), and lasagna (pre-prepped) + ceasar salad + rolls (pre-prepped).

I'm also clean out of EBT, so I'll be working with what I have this week.
